TRION HUMIDIFIERS PROVE
THE MATURE CHOICE FOR CHEESE FACTORY

The Stilton cheese produced by the Colston Bassett Dairy is now manufactured to an even higher quality standard, thanks to the recent installation of a new, high-efficiency humidification system from Trion.

A dual pneumatic, air/water humidification system from Trion's popular Herrmidifier range has been installed to serve cheese storage areas, thereby improving cheese yield at this farmer's co-operative Dairy, near Nottingham.

Located on the top floor of the dairy, the two Stilton stores are each home to over 2,800 cheeses. They provide the necessary environment for the cheese to mature fully before it is ready for sale. However, during the Spring and Summer months, high ambient temperatures had been causing 'drying out' problems for the Dairy.

"If the cheeses dry out too much in storage, then they lose weight and we lose revenue" explains Richard Rowlett from the Dairy. "This lack of moisture also prevents the Stilton from "blueing" adequately, affecting its quality and taste. By introducing more humidity and cooler air into the stores, we were sure that we could successfully resolve both these issues".

Ideal for humidity control applications in such large areas, Trion's Herrmidicool dual pneumatic, air/water atomizing system was specified for the project. The raw water system fitted at the Dairy utilises compressed air and a filtered, pumped mains water supply to provide a simple-to-install, cost-effective and controllable humidification solution, since it is necessary to control the storage rooms at approximately 13oC and 95% relative humidity. It features 12 brass atomizing heads, each with a capacity of 5.45 kg/hr. These heads are self-cleaning and self-sealing to minimise maintenance costs. Stainless steel systems can also be supplied for use with treated water supplies.
